Oven roasted Buffalo legs.....use non stick aluminum foil on cookie sheet. Lay chicken legs on foil 1 inch apart. Heat oven to 400 deg. season legs with salt, pepper, and a dash of cayenne. Cook for 30 min, remove from oven, mop with favorite wing sauce, and replace in oven. Cook additional 30 min or until skin is crisp and all drippings on foil are dry. Remove from oven....add more sauce if desired.....Better Than Wings!!!!!! Great for football/sports parties!!!!

I discovered the joy of steak done with a cast iron skillet and finished in oven...awesome.
Just always remember the handle of the skillet is HOT. And no I haven't grabbed it ...yet.

Haha. Well usually the skillets I use have heat resistant handles....have to be careful with using the cast iron.
